Chocolaty, chewy, gooey cookies
These really are the most chocolaty, gooey cookies I have ever had. Very decadent, and so easy to make. Perfect with a cup of coffee.

Here is what you need

  • 125g caster sugar
  • 100g light brown soft sugar
  • 125g butter, softened
  • 1 egg
  • 1 tsp vanilla extract
  • 230g self-raising flour
  • ½ tsp salt
  • 1 tbs drinking chocolate
  • 1 tbs cocoa
  • 100g chocolate chips


JFP_5854Add 125g of soft butter into a bowl

JFP_5861Add 125g caster sugar to the butter (I forgot to add 100g soft brown sugar at this stage, oops!)

JFP_5871Cream together the butter and the sugar

JFP_5932Add one egg and continue to cream together until the mixture is fluffy

JFP_5943Add one teaspoon vanilla extract

JFP_5978Add 230g self raising flour

JFP_5987Add 1/2 teaspoon of salt

JFP_5995Sift 230g self raising flour into the butter mixture

JFP_5999Add the brown sugar (Forgot to do this earlier)

JFP_6006Add 1 tablespoon of drinking chocolate (Optional) and 1 tablespoon of cocoa

JFP_6042Mix ingredients together. The ingredients will be quite stiff at this point so you can use your hands.

JFP_6061Add 100g of chocolate chips

JFP_6064Continue mixing

JFP_6097Roll into balls (About a walnut size)

JFP_6105Space them equally apart on a baking tray (These are non-stick trays)

JFP_6205After about 10 minutes at 180C, gas mark 4 they will look like this. Keep them in a bit longer, if you want them less gooey

    Even though I’m biased for obvious reasons!:>
    I must say that these cookies are divine! They have slightly nutty, delicious flavour, which is odd, since there are no nuts in the recipe -I reckon it’s the brown sugar.
    I can compare them to famous Ben’s cookies from high-street!
