Pumpkin, chicken & chickpea soup

Pumpkin soup

A quick and delicious soup for winter containing chicken, pumpkin, chickpeas, leek, cumin and chilli flakes. To make this dish vegetarian, simply exclude the chicken.

You will need the following:

  • 2 cans of chickpeas
  • 1 litre of chicken stock
  • 2 teaspoons of cumin
  • pinch of chilli flakes
  • 4 chicken breasts
  • 2 leeks
  • 2 butternut squash pumpkins


JFP_7583Add chickpeas to a casserole dish

JFP_7617Add 1 litre of chicken stock to the chickpeas.

JFP_7633Add 2 teaspoons of cumin

JFP_7694JFP_7761Cut the pumpkin into cubes and fry until slightly caramelized

JFP_7855JFP_7867Fry the leak until its softened and add it to the casserole dish

JFP_7879Brown 4 chicken breasts

JFP_7905Add the browned chicken to the pot

Cover and cook for 30 – 45 minutes until the pumpkin is soft.
