Chocolate Sugar Cookies

Tasty, super easy and really, really quick to make. You can have a batch of about 100 (depending on size) ready in under an hour.

You will need the following:

  • 2 1/2 cups of all purpose flour
  • 1 cup cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup corn flour
  • 1/2 tsp salt
  • 240g soft butter
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 tbs oil

JFP_0467Add 1 cup granulated sugar to a mixing bowl.

JFP_0476Add 240g of soft butter.

JFP_0482Add 2 tsp vanilla extract.

JFP_0496Add 1/2 tsp salt.

JFP_0526JFP_0536JFP_0542Mix the ingredients together using an electric mixer. Note that it will seem like the mixture has curdled, just keep on mixing for a few minutes until you have a smoother mixture.

In a separate bowl combine the dry ingredients.

JFP_0585Add 1 cup cocoa powder.

JFP_0603Add 1/2 cup corn flour.

JFP_0619Add 2 1/2 cups of all purpose flour and sift the ingredients together.

Add wet ingredients that were set aside earlier.

JFP_0713JFP_0732The mixture will get quite thick due to the corn flour. Use a wooden spoon to continue mixing.

JFP_0787Cookie guns are very useful tools and will save you a LOT of time! Got this one on eBay for £5 with 20 different shape attachments, a pretty good investment.

JFP_0791JFP_0798Choose your favourite attachment and fill the cookie gun with dough. It takes less that a minute to fill a whole tray.

JFP_0829Bake for 12 minutes at 160C fan assisted or 180C on normal.
